I finally gave in and tried a one pot recipe the other day. It was for Vegan Spaghetti Alla Puttanesca with Chickpeas & Artichoke. You can find the recipe here. I love to cook so a one pot meal seemed a bit suspicious to me. My rating of this dish is 10 out of 10. It was even more delicious than I imagined. It is full of fibre and extremely healthy. I thought I would break down just what the ingredients in this dish can do for you.
Onions are amazing! They lower blood pressure, benefit your connective tissue and are filled with antioxidants. The Ancient Egyptians ate them as a staple of their diets and even received them as currency.
The antioxidants in onions protect your blood vessels by reducing inflammation and keeping them elastic and flexible.
Currently onions are being researched for both skin care and cancer. They even boost your immune system. Pretty amazing for such an unassuming vegetable.
One of nature’s greatest healers is garlic. When you look at a list of its properties you may even believe that it heals everything!
Garlic reduces bad cholesterol and raises good while clearing fat from the blood. It’s a great antihistamine and works to help clear mucus in colds.
Olive oil usually gets the limelight but did you know that olives themselves have health benefits?
Traditional use of olives is for inflammatory conditions in allergies. Modern research has shown that olive extracts work as anti-histamines.
A phytonutrient from olives has been linked to cancer prevention.
New studies are finding that olive consumption can help prevent bone loss. The Hydroxytyrosol has been shown in studies to increase bone mass.
Oregano has many traditional uses due to its extensive list of healing actions:

Basil is used for:

The antioxidants in tomatoes help with protection against various forms of cancer, heart health, diabetes, skin health and depression.

Chickpeas are high in fibre and potassium. They are rich in calcium and magnesium. They are thought to assist with heart health, cancer, digestions, inflammation and more!
This was the most surprising of all. I will definitely be eating more artichokes.
Artichokes have super high antioxidant levels and are high in vitamin C. Artichokes have polyphenols which are chemoprotective. This means they can slow down, stop or even reverse the effects of cancer.
Artichokes act as a liver tonic and are great for the digestion.
The high folic acid levels in artichokes can help in pregnancy to have healthy babies.
Artichokes help with brain health. They act as vasodilators which allow more oxygen to the brain and increase cognitive function.

It is clear that this dish is incredibly good for you. It just goes to show that not everything that is healthy doesn’t taste good. This is delicious and I encourage you to try this recipe.
